Often the best ones will be run by people who have sports science degrees or have a background in martial arts or gym instruction.

It is then worth looking at how they approach your requirements. Often it will be about looking at your personal circumstances and seeing what you can do to meet your goals. For example a common desire is to eat better. However people may not have time to cook every night. A fitness professional can often give you recipes to cook at the start of the week that you can freeze and then eat quickly, in effect creating healthy ready meals.
